Strange Shape - Tasty Bird
This strangly shaped bird graced our Thanksgiving table this year, and I'd have to say it was pretty spectacular and cooked to perfection. Brined for two days in buttermilk and salt, its spine cut and breast bone pressured to crack, it lay splayed and flat in a baking pan. If you'd like to see how it looks raw, email me and I'll send you an image of that. The recipe came from the New York times. I took the shot with my Fuji W3 and approximated it into a phantogram with lines from the front and back of the kitchen counter.
